Job summary

The Hodson Bay Hotel, part of the Hodson Bay Group, is recruiting a Pastry Chef de Partie to join our award-winning culinary team in Athlone. This full-time role (39 hours per week) offers the chance to craft pastries, desserts, and confections to exacting standards.

Ideal applicants have at least 1 year in a pastry section, a pastry qualification preferred but not essential, and a strong grasp of HACCP and food hygiene. Fluency in English essential and competitive salary provided.

Qualifications

• Minimum 1 year’s experience in a professional kitchen, pastry section.
• Qualification in Pastry is desirable but not essential.
• Strong knowledge of pastry preparation, baking techniques, and dessert presentation.
• Good understanding of Food Hygiene and HACCP principles.
• Fluent in written and spoken English.

Responsibilities

• Prepare and present high-quality pastries, desserts, baked goods, and confectionery items to the highest standards.
• Ensure all pastry products are produced consistently and in line with menu specifications and presentation standards.
• Organise and prepare daily mise en place to support efficient service.
• Maintain knowledge of all pastry offerings, seasonal menus, and special events.
• Monitor stock levels and assist with ordering and stock rotation procedures.
• Minimise food waste and ensure effective use of ingredients.
• Work closely with the wider kitchen team to consistently exceed guest expectations.
• Support and guide junior members of the kitchen team where required.
• Adhere to all food safety, HACCP, hygiene, and health & safety regulations.
• Ensure pastry equipment is maintained and report any maintenance issues promptly.
