Job summary

Donna Restaurant Ubud in Bali is seeking a skilled kitchen professional to assist the Executive Chef in daily operations, ensuring smooth workflow and high standards of quality and presentation.

You will supervise kitchen staff, monitor food costs and inventory, and conduct daily briefings to maintain performance. In the Executive Chef's absence you take charge, supporting menu development and training the team.

Responsibilities

• Assist the Executive Chef in managing daily kitchen operations and ensuring smooth workflow.
• Supervise, coordinate, and motivate kitchen staff to maintain high performance.
• Oversee food preparation, cooking, and presentation to ensure consistent quality and standards.
• Ensure all dishes meet established recipes, portion sizes, and presentation standards.
• Conduct daily kitchen briefings and monitor team performance.
• Monitor food costs, inventory, stock levels, and minimize food waste.
• Ensure compliance with food safety, hygiene, and sanitation standards (HACCP).
• Train and develop kitchen team members to improve their culinary skills.
• Assist in menu development, recipe testing, and new dish creation.
• Take charge of kitchen operations in the absence of the Executive Chef
