Job summary

The Cakap Group seeks a Head Chef for PETRA, a beachside venue in Bingin, Bali, opening soon. You will own the kitchen operations, menu development, food safety and costing, leading a multi-section team to ensure first-time-right plating across a high-volume service.

Work closely with the Director and Venue Manager, relocate to Bali area if needed, and contribute to PETRA’s culinary identity from day one. Excellent English and Bahasa Indonesia required.

Qualifications

• Minimum 5 years in professional kitchens, with at least 2 years as Head Chef or equivalent leading a team.
• Strong grill/open-fire cooking skills with contemporary, international plating.
• Ability to cost menus, control portions, waste and stock.
• Thorough HACCP knowledge and kitchen hygiene discipline.
• Fluent in English and Bahasa Indonesia, collaborative with service, bar and management teams.

Responsibilities

• Lead all kitchen areas and shifts, including main kitchen, show-kitchen grill and skewers grill, and set roaster/section chart.
• Ensure Chef on Duty on each shift, appoint pass grill chefs, and review daily checklists.
• Coach and train kitchen team from Executive Sous Chef to commis, maintaining morale and teamwork.
• Collaborate with Venue Manager on service pacing, menu availability and guest issues.
• Own the menu, costed recipes, yields and plating guides, approve changes, and ensure consistency.
• Develop seasonal dishes with the Venue Manager and test them before launch.
• Maintain food cost within budget, manage stock, and minimize waste.
• Enforce HACCP-based safety, allergen control, temperature logs, labeling and hygiene.
