Job summary

7AM 7PM Group in Denpasar, Bali is seeking an experienced Head Baker to lead our bakery operations and drive product quality across all batches. You will oversee dough preparation, fermentation, baking, and the continued development of breads, pastries, and specialty items.

You will manage a high-volume team, maintain rigorous food safety and HACCP standards, establish production schedules, and identify cost-saving opportunities while preserving exceptional taste and texture.

• 3+ years in Head Baker or supervisory role.
• Bread production, Viennoserie and speciality baking techniques.
• Fermentation management and dough handling.

Responsibilities

About the role

7AM 7PM Group is seeking an experienced Head Baker to lead our baking operations in Denpasar, Bali. This is a full-time position where you will oversee all aspects of our bakery production, from product development to quality control and team management. As Head Baker, you will play a crucial role in maintaining the highest standards of excellence in our baked goods and establishing 7AM 7PM Group as a premier destination for quality bakery products. This role offers the opportunity to shape the culinary direction of our bakery whilst managing a dedicated team in our state-of-the-art facility.

What you'll be doing

Leading daily bakery operations and managing all aspects of dough preparation, shaping, fermentation and baking processes

Developing and refining recipes for breads, pastries and speciality items whilst ensuring consistency across all products

Managing inventory, monitoring ingredient quality and maintaining stock levels to optimise production efficiency

Training, supervising and mentoring bakery staff to ensure adherence to established procedures and quality standards

Maintaining rigorous food safety and hygiene standards in accordance with local and international regulations

Implementing quality control measures to ensure all baked goods meet our exacting standards before distribution

Collaborating with management to establish production schedules and meet customer demand forecasts

Identifying opportunities for process improvement and cost optimisation without compromising product quality

Managing equipment maintenance and ensuring all bakery machinery operates efficiently

What we're looking for

At least 3 years in a Head Baker or supervisory role

Comprehensive knowledge of bread production, Viennoserie and speciality baking techniques

Proficiency in fermentation management, dough handling and product consistency standards

Strong understanding of food safety regulations, HACCP principles and bakery hygiene protocols

Proven experience managing and training bakery teams in a high-volume production environment

Excellent organizational and time management skills with the ability to juggle multiple priorities

Strong communication skills and the ability to work collaboratively across departments

Experience with bakery equipment operation and maintenance

A passion for quality baking and a commitment to continuous improvement
