The Apurva Kempinski Bali is seeking an Executive Pastry Chef to lead the pastry and bakery operations in a premium, five‑star setting on Bali island. You will supervise pastry staff, craft innovative menus for outlets and banquets, and uphold the highest culinary standards aligned with guest expectations.

Reporting to the Executive Chef, you will manage costing, training, and budgeting while ensuring HACCP and OH&S compliance across the pastry kitchen.

Qualifications

5+ years in kitchen management role, preferably with an international 5* hotel chain.
10+ years pastry kitchen experience.
Proficiency in Microsoft Office.

Responsabilités

Supervise the Pastry/Bakery kitchen staff and operations.
Create new pastry and dessert menus for restaurant outlets and banquets, including tastings, photos, and costing.
Establish culinary standards for Pastry/Bakery aligned with target market needs.
Develop and maintain up-to-date operations manuals for all pastry production and stewarding, with accurate costing of dishes.
Monitor, cost, and portion control for pastry items; ensure compliance with hotel standards and SOPs.
Oversee food purchasing for pastry and bakery; liaise with Chief Steward to maintain hygiene and safety standards.
Coordinate training needs analysis for kitchen staff and implement programs; participate in performance appraisals.
Assist in budgeting for the department and in preparing the annual departmental budget.
Ensure OH&S compliance and safety procedures in the pastry kitchen.
