Job summary

The Apurva Kempinski Bali seeks an Executive Pastry Chef to lead the Pastry/Bakery operations, designing and costing menus for restaurant outlets and banquets while maintaining top quality and presentation of desserts.

You will supervise the pastry team, manage inventory and purchasing, train staff, and coordinate with the Executive Chef to optimize department performance within budget and safety guidelines.

Qualifications

• Minimum 5 years in kitchen management, ideally in international 5-star hotels.
• Minimum 10 years pastry kitchen experience.
• High-end dessert plating and boutique pastry experience.

Responsibilities

• Supervise all employees in the Pastry/Bakery kitchen.
• Create and cost pastry and dessert menus for outlets and banquets, conduct tastings and photos with costing.
• Establish culinary standards for Pastry/Bakery.
• Develop and maintain operations manuals and costing for pastry dishes.
• Oversee all pastry kitchen staff in preparation/presentation per hotel standards.
• Oversee pastry and bakery purchasing.
• Monitor costs, quality, inventory and portions daily.
• Ensure hygiene and safety compliance in the kitchen.
• Coordinate with Executive Chef on budgeting and staffing.
