We are seeking a dedicated, detail-oriented, and versatile Cook to join our client’s growing team in Sanur. In this role, you will play a crucial part in executing high-quality daily menu items, managing fresh prep and inventory, maintaining pristine sanitation standards, and supporting event catering.

Produce daily pastries, cakes, breakfast items (utilizing free-range eggs and sourdough), and signature Mam Fresh bowls/plates according to rigorous recipe and presentation standards.
Maintain strict quality control over all finished components and dishes before service.
Execute daily checks and replenishment of core Mam Fresh ingredients (proteins, veggies, tofu, rice, eggs).
Actively manage food freshness and quality control by strictly implementing First In, First Out (FIFO) principles.
Ensure all prepped items, ingredients, and batches are clearly dated and labeled.
Restock workstations and coordinate closely with FOH teams to prepare and scale high-demand items or seasonal specials (e.g., Mam Fresh retail sauces).
Take full responsibility for maintaining a clean-as-you-go workspace at all times.
Wash and sanitize all kitchen service ware, heavy pots, pans, mixing bowls, and cooking utensils throughout the shift.
Ensure utility and washing areas remain organized, uncluttered, and compliant.
Conduct daily cleaning of all BOH appliances, including commercial ovens, grinders, and refrigerators.
Log any hardware or performance issues immediately for the FOH Lead to address.
Maintain pristine preparation tables and dishware sanitation throughout operating hours.
Ensure strict individual compliance with Indonesian food safety, hygiene, and workplace safety regulations (e.g., HACCP principles) to eliminate cross-contamination.
Prepare large-volume BOH items, pastry platters, and specialty bowls for special events.
Handle event logistics calmly to guarantee meal delivery timeliness while separating event inventory to protect normal daily FOH operations.
Experience: Minimum 1–2 years of hands‑on experience in a kitchen environment, specifically with baking, breakfast prep, or line cooking.
Knowledge: Strong understanding of Indonesian food safety standards, HACCP guidelines, and FIFO inventory control.
Skills: Proficient in basic pastry/baking techniques, knife skills, batch prep, and dish sanitation.
Attitude: Energetic, proactive "clean-as-you-go" mindset, comfortable handling heavy kitchen cookware, and reliable under fast-paced service conditions.
Location: Based in or able to commute daily to Danau Poso, Sanur.
