Job summary

Donna Dining Ubud seeks a Bar Manager to launch our 85-seat Italian fine dining concept in Ubud. You will build the bar program, oversee cocktails and wine, implement stock control, and schedule staff with a focus on teamwork and precision under pressure.

This Bali-based leadership role requires solid hospitality experience, fluency in English, and knowledge of European wines and espresso. Immediate start preferred; pre-opening experience is a plus.

Qualifications

• Be Bali based with immediate availability.
• Fluent English spoken, intermediate written.
• 2–5 years of proven hospitality management experience.
• Stable, continuous employment history.
• Solid understanding of European wines.
• Up-to-date expertise in classic and modern cocktail techniques.
• Excellent teamwork and collaborative leadership.

Responsibilities

• Configure POS systems and add new beverage items and modifiers.
• Build a cocktail and mixology menu blending modern techniques with Italian classics.
• Curate wine suggestions with intermediate knowledge of European wines.
• Implement stock control, regular stock takes, and inventory accuracy.
• Design efficient staff schedules aligned with guest traffic and labor budgets for 85 seats.
• Lead by example with teamwork and composure during high-pressure service.
