The Training Manager is responsible for building, delivering and continuously improving the training and service standards across Feather & Bone's Front of House teams. This role owns onboarding and orientation for new hires, leads the implementation of Standard Operating Procedures (SOPs), and provides hands-on operational support during service and events. The Training Manager is the guardian of consistent, high-quality guest experience across all outlets, responsible for the training and standards of Feather & Bone's front of house staff.
Key Responsibilities
Service Training & SOP Implementation
- Design, deliver and continuously refine structured training programmes covering food and beverage service standards, guest experience, sequence of service and product/menu knowledge.
- Develop, document and roll out Standard Operating Procedures (SOPs) across all FOH functions, including reservations, seating, service sequence, POS use and closing procedures.
- Conduct regular on-floor coaching, shadowing and refresher training to reinforce standards and close skill gaps.
- Monitor service quality through floor observation and guest feedback, translating findings into targeted training actions.
- Partner with outlet and restaurant managers to identify skill gaps and build tailored, outlet-specific training plans.
Onboarding & Orientation of New Staff
- Deliver company orientation sessions covering brand values, culture, grooming standards and service expectations.
- Track new hire training progress and probation readiness, providing structured, timely feedback to staff and managers.
Operational & Events Support
- Provide hands-on operational support on the floor during service, private events and high-volume periods, stepping in to assist teams as needed.
- Support basic day-to-day operations, including staffing coordination and cross-training between outlets.
Standards & Compliance
- Act as the guardian of Feather & Bone's FOH service standards across all outlets.
- Conduct regular audits and spot checks to ensure SOPs are being followed consistently.
- Maintain accurate training completion and certification records for all FOH staff.
Requirements
- Solid experience in food & beverage / hospitality training, or restaurant management with a strong training focus.
- Solid understanding of Front of House service SOPs and Hong Kong hospitality service standards.
- Cantonese and Mandarin speaking ability strongly preferred; fluent spoken and written English required.
- Proven experience designing and delivering training to teams at scale.
- Strong coaching, facilitation and communication skills, with the ability to give clear, constructive feedback on the floor.
- Hands-on and calm under pressure, with the flexibility to work evenings, weekends and event schedules as required.
- Organized and detail-oriented, comfortable maintaining training documentation and records.
