The Assistant Vice President, Beverage is responsible for providing strategic leadership and operational oversight of Beverage and Cigar programs across Galaxy Macau's diverse portfolio of restaurants, bars, lounges and integrated resort experiences. Reporting to the Senior Vice President, Food & Beverage, the incumbent will drive beverage innovation, commercial performance, guest engagement, and talent development while reinforcing Galaxy Macau's position as Asia's premier luxury dining and entertainment destination.
Primary Responsibilities:
- Oversee and optimize beverage and cigar operations across Galaxy Macau's portfolio of signature restaurants, bars, and lounges.
- Deliver world-class guest experiences, achieve financial objectives, maximize productivity, and drive sustainable revenue growth across all beverage-related businesses.
- Establish and execute a comprehensive beverage and cigar strategy encompassing emerging beverage trends and curate unique experiences that enhance each venue's positioning while supporting Galaxy Macau's luxury brand standards and market differentiation.
- Assume accountability for beverage and cigar revenue, profitability, cost management, inventory optimization, procurement efficiencies, and achievement of budgeted financial targets.
- Utilize market intelligence, guest insights, and performance analytics to identify growth opportunities and enhance commercial returns.
- Lead a team of Sommeliers and Cigar Masters in developing innovative concepts, signature programs, and experiential offerings.
- Identify strategic partnerships, exclusive products, and emerging opportunities to strengthen Galaxy Macau's reputation as a leading destination for food and beverage excellence.
- Develop strong relationships with VIP guests, premium customers, industry partners, suppliers, and key stakeholders.
- Actively review guest feedback and implement initiatives that elevate guest satisfaction, loyalty, and repeat visitation across all venues.
- Collaborate closely with F&B, Procurement, and Marketing to create innovative food and beverage pairing experiences that elevate the overall dining journey.
- Support the development of seasonal promotions, chef collaborations, special events, and exclusive beverage experiences.
- Develop and execute a calendar of high-profile beverage events, wine dinners, masterclasses, guest shifts, brand activations, and industry showcases.
- Cultivate relationships with global beverage producers, distributors, and luxury brands to secure exclusive offerings and partnerships.
- Lead recruitment, coaching, performance management, and career development initiatives for the Beverage department.
- Establish structured training programs, certification pathways, and succession plans to build a world-class beverage team and strong leadership pipeline.
Requirements:
- Minimum 15 years in F&B industry, with minimum 5 years in a senior role, managing luxury F&B operations with well known establishments.
- Experience working at 5-star luxury Hotels or managing Michelin-starred restaurants with proven capability in managing P&Ls.
- Possesses deep knowledge of wines and spirits with recognised certifications e.g. WSET Advanced Level, Master Sommelier and industry awards as well as working knowledge of Cigar operations.
- Strong in International cuisines (especially in Western); knowledge of other cuisines is advantageous.
- Possesses good experience in managing premium customers and effective at building customer relationships.
- Has strong network of international food and beverage contacts, including Wine Makers, Chefs and Suppliers.
- Leads by example, possesses strong interpersonal and motivational skills to manage a large multi-cultural work force.
- Strong financial acumen with ability to manage budgets and well organised administratively.
- Ability to work with Marketing team and collaborate with other F&B clusters within Galaxy.
- Competency in the use of Office softwares to compile various management reports, financial spreadsheets, and PowerPoint for presentation to management level in communicating complex messages and suggest solutions in a high level forum.
- Fluency in English is a must. Understanding of Cantonese or other Western language is a plus.
