Job summary

Island Shangri-La in Hong Kong seeks an Assistant Chief Steward to maintain cleanliness and hygiene in the Stewarding area and kitchen. You will support the Head of Department in daily operations, inventory management, and safety compliance, partnering with Health Ministry on regulatory matters.

The role requires 5+ years in hospitality, at least 3 years in a supervisory role, and strong HACCP knowledge, with fluency in English and Chinese.

Qualifications

• At least 5 years of hospitality or catering experience.
• Minimum 3 years in a supervisory or similar role.
• Sound knowledge of food hygiene, workplace safety and HACCP standards.
• Good command of spoken and written English and Chinese.

Responsibilities

• Assist the Head of Department in managing daily Stewarding operations, including cleaning processes and stock control.
• Plan quarterly inventory counts, analyze losses, and suggest procurement of equipment.
• Communicate effectively with the Department and keep Management informed of guest feedback.
• Liaise with Health Ministry on environmental and hygiene matters.
• Supervise silverware polishing, kitchen cleaning and waste disposal; provide on-floor support.
• Promote environmentally responsible practices including waste reduction and recycling.
• Perform other duties and special projects as assigned by Management.

About the Role

As an Assistant Chief Steward, you will be responsible for maintaining cleanliness and hygiene in kitchen and stewarding area.

Key Responsibilities

Assist the Head of Department in managing the daily operations of the Stewarding Department, including cleaning processes, stock control and adherence to hygiene, safety, and health standards across all F&B areas.

Plan and execute quarterly inventory counts; analyze losses and breakages, and recommend procurement of operational equipment as needed.

Ensure effective communication within the Department and keep Management informed of operational matters and guest feedback.

Liaise with the local Health Ministry on environmental and hygiene-related matters.

Supervisesilverware polishing, kitchen cleaning, and waste disposal while providing hands-on on-floor support.

Promote environmentally responsible practices, including waste reduction and recycling.

Perform any other duties and special projects as assigned by Management.

About You

At least 5yearsof relevant experience in Hospitality or Catering Industry, with minimum 3 years in a supervisory or similar role.

Sound knowledge of food hygiene, workplace safety, and HACCP standards.

Well versed in Microsoft Word, Excel, PowerPoint and Chinese Word Processing.

Strong leadership, communication, and organizational skills.

Good command of spoken and written English and Chinese.
