Job summary

The Ivy Collection in Glasgow is expanding with The Ivy Brasserie and The Ivy Asia, and is seeking a skilled Sushi Chef to join our culinary team. You will work in a fast-paced sushi section, crafting sushi & sashimi with traditional and modern techniques, while maintaining peak quality during busy hours.

Qualifications

• Proven experience as a Sushi Chef in a high-volume restaurant or sushi bar.
• Strong sushi‑making skills with traditional techniques.
• Excellent knife skills and attention to detail.
• Ability to work efficiently under pressure in a fast-paced environment.

Responsibilities

• Prepare and assemble sushi rolls, nigiri, sashimi, and other sushi dishes according to traditional recipes and standards.
• Ensure the highest standards of quality, flavour, and presentation in every sushi dish.
• Manage inventory of sushi ingredients and supplies, and coordinate ordering as needed.
• Maintain cleanliness and organisation of the sushi station, including sushi knives and other equipment.
• Uphold sushi‑making techniques and standards.
