Job summary

The Royal Castle in Dartmouth, part of St Austell Brewery, is seeking a versatile Sous Chef to join our kitchen team. You’ll support the Head Chef, work in a fast-paced environment, and create dishes using locally sourced produce.

We offer training, opportunities to progress, and generous staff benefits including meal provided on shifts over 6 hours, discounts, and flexible working.

Qualifications

• Experience as a versatile Sous Chef in a fast-paced environment.
• Ability to lead or support kitchen team under Head Chef.
• Confident with stock management systems.

Responsibilities

• Support Head Chef in leading the kitchen team and ensuring dishes meet specifications.
• Adapt menu offerings using flexible writing processes to meet business needs.
• Maintain cleanliness, safety, and efficient kitchen operation during peak times.

The Royal Castle occupies a landmark location in the heart of Dartmouth. Our award-winning 17th-century hotel enjoys enviable views over the River Dart and offers the perfect place for enjoying a drink and a bite to eat.

Are you a versatile Sous Chef with experience of working in a fast-paced environment? Join our talented kitchen team and you’ll be working alongside passionate people, with locally sourced produce, to provide high quality food that delights our guests. As Sous Chef, you will support your Head Chef in leading our talented kitchen team while ensuring the correct procedures are followed and specifications for each dish are precisely met. You will utilise the flexibility enabled by our menu writing processes, to help adapt our offer to meet the needs of our business and our guests.
