Job summary

The Royal Castle in Dartmouth, part of St Austell Brewery, is seeking a versatile Sous Chef to join a busy kitchen team. You’ll support the Head Chef and oversee menu execution with locally sourced produce.

You’ll help ensure correct procedures and dish specifications are met, and you’ll adapt the menu using flexible writing processes to meet guest needs. The role offers training and progression in a picturesque setting.

Qualifications

• Experience in a fast-paced kitchen environment.
• Strong organisational skills and attention to detail.
• Ability to work collaboratively with chefs and front of house.

Responsibilities

• Support Head Chef in running the kitchen during service.
• Ensure procedures and dish specifications are followed precisely.
• Assist with evolving menu items and writing processes to meet business needs.
• Maintain high standards of cleanliness and safety in the kitchen.

Join our talented kitchen team and you’ll be working alongside passionate people, with locally sourced produce, to provide high quality food that delights our guests. As Sous Chef, you will support your Head Chef in leading our talented kitchen team while ensuring the correct procedures are followed and specifications for each dish are precisely met. You will utilise the flexibility enabled by our menu writing processes, to help adapt our offer to meet the needs of our business and our guests.
