Job summary

Courtyard by Marriott Edinburgh is seeking a passionate Sous Chef to support the Head Chef in delivering exceptional dining experiences in our 240-bedroom hotel in Edinburgh. You will lead the kitchen team, develop colleagues and ensure every dish reflects our commitment to quality and hospitality.

In this role you will drive operational efficiency, manage stock and costs, maintain high safety standards and collaborate with Food & Beverage to create memorable menus that delight guests and uphold

Qualifications

• Proven experience as a chef with strong technical skills.
• Ability to lead by example, communicate effectively under pressure.
• Experience in menu planning, kitchen operations and cost control.
• Commitment to food safety and high standards.

• Support kitchen operations, service delivery and menu execution.
• Prepare, cook and present high-quality dishes consistently.
• Lead, motivate and develop the kitchen team.
• Maintain food safety, hygiene and health and safety standards.
• Manage stock, portion control, food costs and waste.
• Support menu planning, seasonal offerings and culinary innovation.
• Collaborate with Food & Beverage and wider hotel teams.
• Ensure equipment, storage and kitchen areas are maintained to a high standard.
