The Caledonian Edinburgh is seeking a Restaurant Sous Chef to support the Head Chef in leading the brigade, delivering exceptional food quality and an elevated dining experience. Based at The Caledonian, Edinburgh, this permanent, full-time role offers a competitive salary and exclusive benefits.

You will oversee kitchen operations, mentor junior cooks, ensure menu execution and maintain strict food safety protocols while upholding luxury brand standards across all sections.

Competenze

• An experienced kitchen leader with strong supervisory or management capability.
• Calm, organised and confident running service and deputising for the Head Chef.
• Skilled in menu execution, specification compliance and operational consistency.
• Knowledgeable in HACCP, food safety, kitchen systems and risk management.

Mansioni

• Lead service, guiding Chef de Parties, Commis and kitchen porters.
• Oversee food preparation, cooking and presentation to luxury brand standards.
• Maintain productivity, food cost control and adherence to specifications.
• Ensure safe, compliant and efficient kitchen operations across all sections.
• Champion training, succession planning and continuous improvement.
