Job summary

Aramark UK in Bridgend is seeking two Sous Chefs to lead the daily operation of the main kitchen at HMP Parc. You will supervise a team of four and work with inmates to run meals on a rolling rota.

The role focuses on high-volume catering, food safety, and maintaining standards in a secure environment. You will oversee breakfast packs, lunches, and dinners, ensuring on-time service and strict portion control.

Qualifications

• Experience in professional kitchen or high-volume catering.
• Strong knowledge of food safety, hygiene and portion control.
• Ability to lead and motivate a team in a secure environment.

Responsibilities

• Support day-to-day kitchen operation on rolling rota.
• Supervise a team of four with two shifts.
• Oversee breakfast packs, lunches and hot dinners and on-time service.
• Manage meal counts and portion control.
• Supervise prisoners while maintaining professional boundaries and site procedures.
• Uphold high standards of food safety and hygiene.
