Pennyhill Park is seeking a Pastry Sous Chef to lead the pastry team and support the Head Pastry Chef in delivering exceptional desserts, pastries and afternoon tea across the estate. You will inspire the team, drive consistency and maintain the highest culinary standards with creative input.

Competenze

• Experience leading pastry teams in high-quality hotel or restaurant environments.
• Strong pastry craftsmanship with focus on presentation.
• Solid knowledge of food safety, HACCP and kitchen best practices.

Mansioni

• Assist Head Pastry Chef in day-to-day leadership of the pastry kitchen.
• Lead and motivate the pastry team to deliver exceptional desserts and afternoon tea items.
• Oversee preparation and service across desserts, pastries, breads, and afternoon tea.
• Train, mentor and develop junior chefs, fostering a high-performing team culture.
• Maintain top standards of food quality, hygiene and cleanliness.
• Assist with menu development and seasonal pastry concepts.
• Manage ordering, stock control and wastage to support budgets.
• Ensure compliance with food safety and health & safety regulations.
