Job summary

Pennyhill Park in Bagshot, Surrey, part of Exclusive Collection, is seeking a Pastry Chef de Partie to create exceptional desserts and pastries across our kitchens. You will join a talented brigade, bringing creativity, precision and flair to every dessert and sweet treat, enriching guest experiences in a luxury setting.

Qualifications

• Previous experience as a Pastry Chef de Partie or ready to progress from Demi Chef de Partie.
• Strong technical pastry skills with experience in high-end hospitality.
• Experience in a luxury hotel/restaurant environment.

Responsibilities

• Prepare, produce and present high-quality desserts and pastries to exceptional standards.
• Own and organize your pastry section for service readiness.
• Collaborate with Pastry Sous Chef and Executive Pastry Chef to deliver pastry offerings.
• Coach and develop junior pastry staff and maintain food safety standards.
• Monitor quality, ensure consistency and manage allergen controls.
• Assist with stock control, ordering and waste reduction.
• Contribute ideas for seasonal menus and guest experiences.

Key Responsibilities

As a Pastry Chef de Partie, you will be:

• Preparing, producing and presenting high-quality desserts, pastries, breads and afternoon tea items to exceptional standards.
• Taking ownership of your section, ensuring it is organised, efficient and fully prepared for service.
• Working closely with the Pastry Sous Chef and Executive Pastry Chef to deliver outstanding pastry offerings.
• Supporting, coaching and developing Commis Chefs and Demi Chefs within the pastry team.
• Maintaining the highest standards of food safety, hygiene and allergen management.
• Monitoring quality, consistency and presentation across all pastry products.
• Supporting stock control, ordering and ingredient management to minimise waste and maximise quality.
• Contributing creative ideas for seasonal menus, dessert development and guest experiences.

Person Specification

As a Pastry Chef de Partie, you’ll be passionate about pastry and will have:

• Previous experience as a Pastry Chef de Partie, or a talented Demi Chef de Partie ready to progress.
• Strong technical pastry skills with a passion for producing exceptional desserts and baked goods.
• Experience working within a high-quality hotel, restaurant or luxury hospitality environment.
• Excellent attention to detail and pride in consistently producing work of the highest standard.
• The ability to perform calmly and effectively in a busy service environment.
• A positive, collaborative approach and a genuine passion for pastry.
• A desire to continue learning, developing and progressing your culinary career.
