Job summary

Zanna Group is seeking a Bakery Production Manager for a night shift in Manchester. You will lead the central bakery operations, producing our signature cookies, doughnuts and brunch items for cafe and retail.

This hands-on role requires a passionate, organised leader focused on quality and creativity. You’ll manage production workflows, lead a small team of bakers and staff, and ensure safety, efficiency and consistency across all products.

Qualifications

• Experience managing bakery or production kitchen at scale.
• Strong knowledge of sweet bakery items (cookies and doughnuts).
• Hands-on leadership with a motivated team.
• Knowledge of food safety, allergen management and HACCP.

Responsibilities

• Oversee day-to-day production of cookies, doughnuts, brunch prep and seasonal specials.
• Lead and support bakers, decorators and production staff safely and efficiently.
• Maintain high food safety and hygiene standards across the kitchen.
• Oversee stock management and ordering with suppliers.
• Collaborate with Head of Food and Café Manager on new product ideas and launches.
• Implement systems to improve production flow and reduce waste.
• Ensure smooth communication with bakery, café and retail teams on packaging and logistics.
• Play a key role in scaling production during peak periods and growth.
