Job summary

Village Hotels seeks a Kitchen Team Leader/Sous Chef to drive the shift, running a busy section while supporting the brigade and upholding brand standards. You will own quality, portion control, and safety on the pass with a focus on consistent service.

You will lead and coach junior kitchen team members, manage stock to par levels, and ensure documentation is prepared for monthly stock takes, all while protecting gross profit and maintaining exceptional guest experiences.

Qualifications

• Experience as a kitchen lead or sous chef.
• Ability to manage a section and assist others.
• Knowledge of food safety standards (HACCP/EHO).
• Stock control and cost awareness.

Responsibilities

• The Kitchen Floor: run your own section as a hands-on Sous Chef while guiding the wider flow of work.
• The Standards: ensure temperature checks, FRESH cooking, and HACCP/EHO compliance.
• The Brigade: supervise and coach junior kitchen team members and KPs.
• The Commercial Reality: protect gross profit, manage stock to par levels, and keep paperwork up to date for stock takes.
