Responsibilities
- Take ownership of Tretho Lounge kitchen from opening to close, ensuring staffing and standards.
- Recruit, develop and coach kitchen team across all roles with clear development plans.
- Be fully knowledgeable about menu specs and kitchen processes, preempt issues.
- Own a site-level action plan with the GM covering wait times, stock, orders and cleanliness.
- Deliver on KPIs: food quality, wait times, wastage and GP; report on performance.
- Schedule fair rotas aligned with sales and bookings, ensuring the right skills per shift.
- Collaborate with front-of-house to build a one-team culture with cross-training.
