Job summary

The Hippodrome Casino, Ltd. is seeking a Head Bartender to lead our Bars team serving God’s Rooftop, the gaming departments and Paddy’s Sportsbook. You will maximise profitability while maintaining the highest standards of service.

You will manage shifts, coach staff, oversee cocktail preparation, control costs and drive premium guest experiences in a busy, luxury environment.

Qualifications

• Proven experience as a Senior Bartender / Head Bartender in a premium venue.
• Strong leadership and team management skills.
• Deep knowledge of cocktails, spirits, and bar operations.
• Excellent communication and organisational abilities.
• A passion for hospitality and guest service.
• Flexibility to work late nights and weekends.

Responsibilities

• Lead bar operations on shift, ensuring smooth, efficient, and high-quality service.
• Deliver exceptional guest experiences, handling queries and resolving issues professionally.
• Set and maintain high standards of service, presentation, and team performance.
• Support and coach the bar team, ensuring strong product knowledge and consistent drink quality.
• Manage peak service periods, adapting staffing and workflows to meet demand.
• Oversee cocktail preparation, bar setup, and adherence to recipes and specifications.
• Ensure accurate cash handling, POS use, and end-of-shift procedures.
• Support stock control, minimise wastage, and maintain organised bar areas.
• Promote premium products and maximise sales opportunities.
• Work collaboratively with wider teams and provide feedback to management on performance and operations.
