Mai Sushi in Chester is recruiting a full-time Chef Manager to lead the team at Foregate Street, CH1 1HP. The role requires enthusiastic leadership, a can-do attitude, and a focus on high-quality, sustainable food.

Qualifications

Experience leading teams in a fast-paced kitchen environment.
Strong knowledge of food safety, HACCP and allergen controls.
Willingness to work early shifts and be on-site in Chester.

Responsibilities

Be accountable for the kiosk and team, maintaining audit standards for food and health & safety compliance.
Ensure the team maintains high cleanliness and food safety standards on site.
Plan ahead and stay highly organized to manage busy service periods.
Prepare fresh ingredients by hand, including meat and fish, each shift.
Label products accurately to meet food safety and allergen requirements.
Be a skilled multitasker and an early riser with shifts starting around 6:00am.
Learn new skills and continuously improve existing ones.

A good understanding of Food Safety & Health and Safety regulations, ability to follow brand standards and comply with company policies.

Be accountable for the Kiosk and the team, maintaining audit standards for food and health & safety compliance while meeting EHO expectations
Ensuring the team maintains a high standard of cleanliness and food safety on site to maintain a safe environment for our customers, our clients and ourselves
Highly organised, with a focus on forward planning
Prepare fresh ingredients by hand, including meat and raw fish products each shift
Accurately labelling products ensuring lawful compliance around food safety and allergen compliance each shift.
Be a skilled multitasker
An early riser as shifts can start at 6:00am some days
Learn new skills or improve skills already mastered

Qualifications

Level 2 Food Safety certificate, HACCP, Allergens and COSHH are Desirable although not essential as full training will be provided.
