Job Description

An exceptional opportunity presents itself for a Commis Chef to join the Food & Beverage department at Raffles London at the OWO.

Reporting to the Executive Chef, you will assist Sous Chefs and Chef de Parties in food preparation and service, ensuring the highest standards are maintained. You will also ensure that kitchen areas, equipment, and utensils are kept clean and tidy according to hotel standards.

Specifically, as the Commis Chef, your responsibilities will include:

  • Following methods and recipes as outlined in communication.
  • Being environmentally conscious and working towards low waste operations.
  • Maintaining and managing your section.
  • Correctly storing and labeling foodstuffs, equipment, and dry goods.
  • Proper stock rotation and ordering food and supplies through the correct channels.
  • Checking and ordering equipment as needed.
  • Contributing to cost management and zero waste initiatives.
  • Managing fair rotas to meet guest and business needs.
  • Participating in monthly communication meetings and nightly briefings with the sous chef.
  • Providing regular feedback to colleagues on performance.
  • Engaging in projects for kitchen development.
  • Ensuring proper storage, labeling, and stock rotation of food and supplies in all kitchen areas.
  • Assisting in equipment maintenance and ordering.
  • Performing additional duties as required, including working in different departments or restaurants.
  • Explaining services to guests, visitors, and staff effectively.
  • Maintaining good working relationships with colleagues and supervisors.
  • Helping new colleagues acclimate to the workplace and standards.
  • Assisting in spot checks to uphold departmental standards.

  • A proven track record in providing high service levels under pressure.
  • Exceptional communication and customer service skills.
  • Willingness to contribute to a 24-hour operational schedule.
  • Previous experience as a Demi CDP or high-performing Commis.
  • A creative approach to producing high-quality food.
