Job Description

An exceptional opportunity presents itself for a Commis Chef to join the Food & Beverage department at Raffles London at the OWO.

Reporting to the Executive Chef, you will assist Sous Chefs/ Chef de Parties in the preparation and service of food, ensuring that the highest standards are always maintained. You will also ensure that the kitchen areas, equipment, and utensils are kept clean and tidy according to hotel standards.

Responsibilities include:
  • Following methods and recipes as outlined in communication.
  • Being environmentally conscious and working towards low waste operations.
  • Maintaining and managing your section.
  • Correct storage and labelling of foodstuffs, equipment, and dry goods.
  • Proper stock rotation of food and managing ordering levels via correct channels.
  • Checking and ordering equipment as needed.
  • Contributing to effective cost management and zero waste initiatives.
  • Managing fair rotas to meet guest and business needs.
  • Participating in monthly communication meetings and nightly briefings with the sous chef.
  • Providing regular performance feedback to employees.
  • Engaging in projects for kitchen development.
  • Ensuring proper storage and labelling in all kitchen areas.
  • Maintaining equipment via appropriate channels.
  • Performing additional duties in the absence of line managers or senior staff.
  • Assisting in other departments or restaurants as required.
  • Explaining services to guests, visitors, and colleagues.
  • Fostering effective working relationships with colleagues and management.
  • Helping new colleagues acclimate to the workplace and standards.
  • Assisting in departmental spot checks to maintain standards.
Who are we looking for?
  • Proven ability to deliver high service levels under pressure.
  • Excellent communication and customer service skills, both written and spoken.
  • Willingness to contribute to a 24-hour operational schedule.
  • Previous experience as a Demi CDP or high-performing Commis.
  • A creative approach to producing high-quality food.
