Job Description

  1. Execute culinary dishes with precision and creativity, maintaining the highest standards of quality and presentation.
  2. Collaborate with the Executive Chef, Executive Sous Chef, and Chef de Cuisine to ensure seamless kitchen operations and consistency in food preparation.
  3. Lead and mentor a team of commis chefs and kitchen assistants, fostering a culture of learning, excellence, and teamwork.
  4. Contribute to menu planning and development, incorporating fresh ideas and current culinary trends.
  5. Adhere to all food safety and hygiene standards, maintaining a clean and organized work environment.
  6. Manage food costs, portion control, and wastage efficiently to maximize profitability without compromising quality.
  7. Participate in training sessions and workshops to enhance culinary skills and stay updated on industry trends.
  8. Strive to exceed guest expectations, delivering memorable dining experiences aligned with the Fairmont brand ethos.

Qualifications

  1. Proven experience as a Chef de Partie or similar role in a luxury hotel or fine dining setting.
  2. Culinary degree or diploma preferred.
  3. Strong knowledge of various cuisines, cooking techniques, and international culinary trends.
  4. Excellent leadership, communication, and interpersonal skills.
  5. Ability to work effectively in a fast-paced environment, handling pressure with professionalism.
  6. Flexibility to work evenings, weekends, and holidays as needed.
  7. Knowledge of HACCP and food safety standards.
  8. Passion for culinary excellence and commitment to continuous learning.
