Job Description

Scope Of Position

To lead and manage a section of the kitchen, overseeing and supervising commis and demi chef de parties, assisting sous chefs in food preparation and service, ensuring adherence to Raffles standards, and maintaining cleanliness and tidiness of equipment and utensils.

Responsibilities

Operation

  • Lead and manage a kitchen section, overseeing production, service, and hygiene standards.
  • Follow procedures, methods, and recipes as outlined in communication.
  • Ensure proper storage, rotation, and labeling of foodstuffs, equipment, and dry goods.
  • Coordinate with sous chefs on stock ordering and deliveries.
  • Participate in training demi chefs, commis chefs, and apprentices to uphold standards.
  • Contribute to the development of dishes for all outlets, maintaining quality standards.
  • Engage in projects aimed at kitchen improvement.
  • Explain services to guests, visitors, and staff effectively.
  • Respond promptly to service needs of guests and staff.
  • Perform additional duties in the absence of line managers or senior staff.
  • Undertake other tasks as assigned, including working in different departments or outlets.

Health and Safety

  • Report and rectify hazards immediately.
  • Be familiar with departmental fire, emergency, and bomb procedures.
  • Ensure safety of persons and property by complying with laws and regulations, and preempting hazards.
  • Promote health and safety awareness within the department.
Qualifications

Qualifications, Skills & Experience

Essential

  • Availability to work on a rota basis.
  • Proven ability to deliver high service levels under pressure.
  • Excellent communication and customer service skills, both written and spoken.
  • Strong time management and multi-tasking skills, with a professional appearance.
  • Willingness to contribute to a 24-hour operational schedule when required.

Desirable

  • Previous experience at a demi chef de partie level or higher.
  • Ability to confidently lead and manage a kitchen section.
  • Experience in a luxury hotel environment with standards such as LQA or Forbes 5*.
