Aldwark Manor Estate in York, North Yorkshire, invites an exceptional Restaurant Manager to lead Chartwell and Clementines in our luxury estate. The role focuses on delivering three rosette dining across the Chartwell restaurant and two rosette operations in a more relaxed setting, with a strong emphasis on team development and wine experiences.

Starting late November, you will drive guest satisfaction, manage costs, and uphold brand standards within a prestigious, privately owned hotel setting

Salary: £3500.00 on a full time contract

Aldwark Manor Estate is a privately owned Hotel with Golf nestled in a picturesque village between York and Harrogate. Set in 200 acres of beautiful countryside, this luxury Hotel provides a complete escape for both business and leisure guests and is a popular venue for weddings.

In recent years, the hotel has undergone significant investment and renovation, transforming the bedrooms, restaurant, residents’ lounge, sports bar and all public areas to deliver a refined and contemporary guest experience.

December 2025 marked the completion and opening of the new Salus Spa facilities, further enhancing the estate’s luxury leisure offering. The next phase of development will see the addition of new bedrooms, expanded event spaces and additional treatment rooms, all scheduled to open later this year.

Purpose of the role:

Aldwark Manor Estate is seeking an exceptionalManagerwith a proven 3 Rosette/Michelin star-standard background to join our award-winning food and beverage team.

This unique role offers the opportunity to work across two distinct dining experiences within our luxury estate:

Three services per week leading Chartwells Restaurant, our prestigiousThree AA Rosettefine dining restaurant.

Two services per week managing our Two AA Rosette restaurant operation, delivering exceptional guest experiences in a more relaxed yet equally quality-focused environment.

This is a fantastic opportunity for an ambitious hospitality professional to be part of a passionate team, helping to create an exceptional place tom work while delivering outstanding guest experiences and service excellence, Applicants must be prepared to start late November.

Main duties of the role:

• Manage Chartwell’s 36 cover restaurant and Clementines wine tasting room.

• The ability to manage, motivate & delegate tasks to your team.

• Recruit, train, coach and develop all team members in Chartwell restaurant to 3 rosette level standard with wine training.

• To support other Food and Beverage outlets when required.

• Develop the wine list (with help from the Food and Beverage Manager), promoting Clementines and wine tasting experiences working with suppliers.
• Create and develop the brand standards to keep moving the business forward, making it a destination for the residential and non-residential clientele.
• To ensure that the team are fully trained on the product including all facilities and service standards expectations.

• To carry duty management shifts in the Estate.

• Ensure target KPIs including guest spend and guest satisfaction scores are met.
• To ensure standards of procedure are in place and followed by the team.
• To ensure all relevant legislation, compliance and procedures in employment law, health and safety, food safety, liquor licencing is followed by all the team at all times.

• Mentor, monitor and develop the Chartwell team.

• Lead the departmental induction of new starters and ensure they are fully competent in the role

• Make sure that 6, 10 weeks reviews with new starters are delivered to all team members as well as 6 monthly objective setting.

• Ensure consumable, food, liquor is maintained at a level suitable for the business.
• Control all costs through payroll and stock control.
• To assist the monitoring Liquor stocks and ensure orders are places in a timely manner.
