Job summary

Ardencote Hotel & Spa in Warwickshire is seeking an experienced Assistant Brasserie Manager to support the Brasserie operations and lead the Food & Beverage team. You’ll work closely with the Brasserie Restaurant Manager to deliver an exceptional dining experience and develop staff on the floor.

The role is hands-on, requires presence on the dining floor, and involves managing Supervisors and Food & Beverage Assistants, along with supporting recruitment, training and performance coaching.

Qualifications

• Must have previous experience in a supervisory or management role within a restaurant, hotel or high-quality hospitality environment.
• Strong knowledge of restaurant operations and service standards.
• Demonstrated ability to lead, motivate and develop a team.
• Excellent communication and interpersonal skills.
• Good commercial awareness with understanding of payroll, costs and budgets.
• Knowledge of food hygiene, allergens and health & safety requirements.

Responsibilities

• Lead the restaurant team during service and maintain high standards.
• Create a warm, welcoming and memorable guest experience.
• Coach and train team through regular feedback and briefings.
• Run effective pre-shift briefings covering VIPs, occasions, dietary requirements and priorities.
• Ensure knowledge of menus, beverages, and hotel offerings.
• Handle guest feedback and resolve issues professionally.
• Support recruitment, onboarding and ongoing development of team members.
• Assist with staffing, scheduling and payroll in line with business needs.
• Identify opportunities to increase sales and improve performance.
• Support achievement of departmental budgets and targets.
• Maintain restaurant standards, SOPs and opening/closing procedures.
• Maintain high standards of food hygiene and safety.
