Job summary

Hiddenwell is seeking an experienced Assistant Restaurant Manager for the Brasserie at Ardencote Hotel & Spa, Warwickshire. You will lead the F&B team, drive service standards and guest experience on the floor, and support the Restaurant Manager in daily operations.

You’ll oversee Supervisors and Food & Beverage Assistants, manage staffing and payroll, and contribute to budgets and upselling opportunities. A hands-on leadership style and passion for hospitality are essential.

Qualifications

• Experience in supervisory or management role within restaurant or hospitality.
• Understanding of restaurant operations and service standards.
• Passion for delivering exceptional guest experiences.
• Experience leading, motivating and developing a team.
• Excellent communication and interpersonal skills.
• Commercial awareness including sales, payroll and cost control.
• Strong organisational skills and ability to stay calm during busy periods.
• Knowledge of food hygiene, allergens and health & safety.
• Positive, hands-on leadership style and willingness to support wider operation.

Responsibilities

• Lead the restaurant team during service and ensure consistently high standards.
• Create a warm, welcoming and memorable guest experience.
• Support, motivate and develop the team through feedback, coaching and training.
• Run effective pre-shift briefings covering VIP guests, dietary requirements and priorities.
• Ensure knowledge of menus, beverages and wider hotel offering.
• Handle guest feedback and resolve issues professionally.
• Support recruitment, onboarding and ongoing development of new team members.
• Manage staffing levels and payroll in line with business needs.
• Identify opportunities to increase sales and upsell.
• Support achievement of budgets and commercial targets.
• Ensure SOPs and opening/closing procedures are followed.
• Maintain high standards of food hygiene and health & safety.
• Take Duty Management responsibilities when required.
• Collaborate with Food & Beverage and other hotel departments.
