Premium Destination Restaurant in Sherborne, on the Somerset/Dorset border, is seeking an Assistant General Manager to join its senior leadership team. You will help lead daily restaurant operations, drive guest experiences, and mentor a high‑performing team across front and back of house.

This pivotal role supports the General Manager, with strong opportunities for career progression within a Rosette‑standard, high‑end dining environment.

What's involved?

As Assistant General Manager, you will work alongside the General Manager to lead daily restaurant operations, drive exceptional guest experiences, and mentor a high-performing team across both front and back of house. You will act as the General Manager's deputy, taking full operational responsibility in their absence.

Key responsibilities include:

• Operational Leadership: Overseeing floor management, leading pre-service briefings, and ensuring seamless service delivery during every trading period.
• Team Development: Supporting recruitment, onboarding, coaching, and succession planning to foster a positive, high-performing culture.
• Commercial & Financial Ownership: Monitoring sales targets, managing labor deployment, overseeing stock controls, and driving profitability.
• Compliance & Excellence: Maintaining EHO readiness, fire safety standards, and ensuring full health, safety, and regulatory compliance across the site.Ideally, you will have a strong background as an Assistant General Manager or senior operational manager within a Rosette-standard, boutique hotel, or high-end fresh-food restaurant environment.
