Job summary

El Fuerte Marbella 5* in Marbella, Spain, is seeking a Kitchen Assistant (Ayudante de Cocina) to join our luxury kitchen brigade. You will support section cooks, prepare fresh ingredients, follow technical recipe sheets, and maintain the cold chain and spotless stations.

At El Fuerte Marbella 5*, culinary passion meets “Cosy & Soulful Luxury.” This flagship hotel first opened in 1957. Later, in 2023, the property reopened as a 5-star resort. It sits directly on Marbella’s promenade, only five minutes from Plaza de los Naranjos. Today, the hotel offers 266 luxury rooms. To support our kitchen brigade, we seek a skilled Kitchen Assistant / Commis Chef (Ayudante de Cocina) in Marbella, Spain.

In this entry culinary role, you will work with section cooks. You will prepare fresh ingredients, follow technical recipe sheets, and stage food displays. In addition, you will protect the cold chain and keep workstations spotless.

Job Description: Kitchen Assistant (El Fuerte Marbella 5*)

Your Mission: Kitchen Speed, Station Order & Food Safety

Your main goal is to deliver consistent, high-quality dishes across all hotel outlets. To do this, you will assist cooks during daily prep and live service. At the same time, you will maintain high hygiene standards. Furthermore, you will keep walk-in fridges clean and organized. Therefore, you will chop vegetables, assemble simple recipes, and track food waste (mermas). As a result, you will prevent kitchen delays and protect our 5-star standard.

Your Key Responsibilities:

• Food Preparation: Assist cooks with daily meal assembly. Moreover, ensure that each plate matches our 5-star quality guidelines.
• Mise en Place: Wash, peel, and chop ingredients for garnishes. Also, prepare supplies early so high-volume service runs quickly.
• Basic Recipes: Cook simple recipes using technical sheets (fichas técnicas). Always check food freshness before plating.
• Buffet Operations: Set up, maintain, and clear hotel buffet stations. In addition, monitor dish temperatures during service.
• Cold Storage: Store incoming food products quick. Thus, you prevent breaks in the cold chain. Clean and organize walk‑in refrigerators daily.
• Waste & Tools: Record food loss and trimmed scraps (mermas). Similarly, inspect kitchen tools and report broken items immediately.
• Sanitation: Sanitize counters, cutting boards, and cooking gear after every shift. Consequently, the team stays ready for the next service.

Who You Are: The Motivated Culinary Assistant

• Prior Experience: You have at least 1 year of kitchen experience in 4-star or 5-star hotels. Experience in Leading Hotels of the World or Preferred Hotels & Resorts is a great plus.
• Formal Education: You completed vocational training (Grado Medio o Superior) in Culinary Arts and Gastronomy.
• Required License: You hold an active Food Handler Certificate (Carné de Manipulador de Alimentos).
• Communication Skills: You speak fluent Spanish. In addition, basic English is a plus. You also know basic Microsoft Office.
• Core Strengths: you show sharp knife skills, fast work habits, and great teamwork under service pressure.
