Job summary

Hotel Terrasse is seeking an skilled Sushi Chef to lead the sushi department in a dynamic restaurant environment in Switzerland. You will prepare and check dishes, manage stock and inventories, and ensure quality and safety standards across all sushi and Asian offerings.

The role requires extensive sushi and Asian cuisine experience, excellent organisation, reliability and flexibility, plus the ability to work under pressure. Willingness to work at other Seven Group locations as needed.

Qualifications

• Diploma as a Chef (Swiss EFZ level)
• Several years of experience in restaurant and hospitality industries
• Extensive sushi and Asian cuisine experience
• Excellent organisational skills

Responsibilities

• Ensure professional and efficient work in the sushi department
• Organise and manage the Sushi department
• Prepare and check dishes
• Handle food products carefully and with attention to costs
• Ensure compliance with HACCP standards
• Maintain high hygiene, cleanliness and organisation
• Receive, check and store food deliveries
• Check quality of food products
• Manage internal and external orders via TcPos
• Be responsible for monthly inventory
• Develop and create new dishes
• Support Executive Chef with staff planning and monitoring using Mirus
• Organise and lead daily team meetings
