Job summary

Royal Camp Services, Western Canada’s premier remote camp and catering company, is seeking a Rig Cook to deliver exceptional culinary experiences in a remote camp setting. The role reports to the Field Supervisor and emphasizes food safety, quality, and guest satisfaction in a camp environment.

The ideal candidate will have experience running a camp or culinary facility, strong hospitality background, and knowledge of the remote camp industry.

Qualifications

  • Red Seal Cook designation is an asset.
  • At least 2 years of relevant experience cooking and baking for groups of 20-100 persons.
  • Must have food safety certifications (Alberta Health Services) and first aid.
  • Must have own transportation to Edmonton, AB or Grande Prairie, AB.

Responsibilities

  • Demonstrate mastery of all cooking techniques.
  • Manage kitchen staff and equipment while ensuring high food quality and safety.
  • Accommodate various diets including vegetarian, vegan, and dietary restrictions.
  • Bake a variety of breads and desserts.
  • Supervise kitchen staff and mentor junior cooks.

Job description

Since 1991, Royal Camp Services has built successful, long-term relationships with both our clients and our staff. As Western Canada's premier remote camp and catering company we provide catering and hospitality solutions for small camps consisting of just a few clients to major camp projects necessitating hundreds of clients.

Reporting to their Field Supervisor, a Rig Cook is responsible for ensuring our clients are delivered an exceptional culinary experience. A Rig Cook is responsible for the food safety and quality of food prepared within their assigned lodge.

The ideal candidate for this role will have experience managing a small camp or culinary facility and is able to consistently deliver high levels of customer satisfaction through their food offerings and client interactions. An understanding of the remote camp industry is an asset. Candidates with a strong hospitality, food safety, and kitchen management background could be successful in this role.

Job duties include but are not limited to:
  • Demonstrate mastery of all cooking techniques
  • Overall responsibility for the kitchen including but not limited to managing staff, maintaining equipment, ensuring food quality, and exceeding food safety standards
  • Accommodate various diets including vegetarian, vegan, cultural, food allergies, and other specific requests
  • Bake breads, squares, muffins, cookies, pies, cakes, and various other desserts
  • Supervise, manage, mentor, train, evaluate, and direct kitchen staff as appropriate to their position
  • Maintain client satisfaction by handling customer complaints in a professional manner
  • Conduct handover with Relief Cook to ensure communication flow
  • Adhere to the cyclic menu system while working within budget by controlling expenditure
  • Ensure staff comply with the Food Safety Program (FSP) via daily documentation review and spot checks
  • Conduct a monthly Food Safety Program (FSP) audit to ensure compliance
  • Ensure all daily, weekly and monthly cleaning tasks are completed
  • Conduct toolbox safety meetings in accordance with Royal Camp Services policy
  • Ensure that Field Level Hazard Assessment and Hazard Identifications are completed by all staff on shift
Requirements:
  • Red Seal Cook designation an asset
  • At least 2 years of relevant experience cooking and baking for groups of 20-100 persons
  • Available to work a split shift
  • Available to work multiple rotations including but not limited to 21-7 and 28-14
  • A valid Alberta Health Services recognized Food Safety Certificate and Standard First Aid Certificate required
  • Must supply your own transportation to our camp transfer site located in Edmonton, AB or Grande Prairie, AB
  • Steel toed non-slip work shoes are required
  • Strong interpersonal and communication skills (including reading, writing, and speaking English)
  • Be able to lift/move up to 25lbs throughout a work shift
  • Misc. safety requirements based upon position and site standards
