Job summary

Dexterra Group is seeking a Pastry Chef to join a remote camp team, overseeing large-scale pastry production and ensuring quality and safety. The role offers fly-in/fly-out rotations (14/14 or 21/21) with a schedule of long shifts and meals provided, with travel via multiple departure airports.

Qualifications

  • Diploma in Hospitality, Culinary Arts or equivalent training and/or related experience.
  • Minimum of 5 years of pastry production in high-volume settings.
  • Bilingual French and English is an asset.

WHAT IS THE JOB?

Location: Nunavik, Nunavut
Language: French and English
Rotation: 14/14 or 21/21 (Fly-in/Fly-out)
Schedule: 11 to 12 hours per shift
Compensation: Competitive salary, with overtime paid at time and a half after 40 hours worked per week.
Departure Points: Multiple departure airports available (Montreal, Québec City, Mirabel).

Located in remote camp environments, we are currently seeking a Pastry Chef to join our team and start immediately.

Reporting to the Production Chef and Project Supervisor, the Pastry Chef is responsible for overseeing and carrying out large-scale production of pastries and baked goods. The successful candidate must ensure that all required menu items are prepared correctly, production targets are met, production tracking is completed accurately, and product quality consistently meets established standards.

The Pastry Chef must be able to work efficiently under pressure, manage time effectively, demonstrate leadership, and maintain a positive attitude at all times.

Duties and responsibilities include, but are not limited to:

  • Manage pastry inventory and rotate stock according to established standards;
  • Produce sponge cakes, sheet cakes, and other pastry bases;
  • Prepare pies, pizzas, and a variety of dough products;
  • Produce Jell-O, coulis, creams, and other complementary dessert items;
  • Prepare breads and a wide range of pastry products;
  • Ensure all products are properly dated, labeled, and compliant with health and safety standards;
  • Ensure all tasks are performed safely and immediately report any incidents or concerns. Do not wait to take action;
  • Perform any other related duties as required by operational needs.

QUALIFICATIONS & REQUIREMENTS

  • Diploma in Hospitality, Culinary Arts, or an equivalent combination of technical training and/or related experience;
  • A minimum of 5 years of experience in pastry production and high-volume food service environments;
  • Bilingualism (French and English) is considered an asset;
  • Previous experience working in a remote camp environment within the natural resources and/or construction industries is considered an asset.
