Qualifications

Job description

Summit Camps is recruiting for workforce camp-based positions. We offer an inclusive work environment, competitive wages and a benefits package available following probationary period. Travel is also covered from your point of departure.

Primary Role: Head Cooks oversee and carry out all aspects of food production and kitchen management in a remote camp.

Qualifications:

  1. Widely recognized Food Handlers Certificate (required), BC FoodSafe Level 2 (an asset)
  2. Post-secondary education in culinary arts (preferred)
  3. Red Seal Chef or Red Seal Apprentice (preferred)
  4. Basic First Aid Certificate (required)
  5. Minimum of 3 years of experience cooking in high volumes in a remote camp, hotel banquet experience also transferrable
  6. Working knowledge of MS Word and Excel, email and attachments
  7. Experience with inventory and ordering procedures, and staying within a set budget
  8. Must be able to pass a drug and alcohol test prior to employment and work/live in a drug and alcohol free camp environment for up to 4 weeks at a time.

  8. Must be able to lift, move, push, pull, and carry up to 25 lbs
  9. Good physical stamina; capable of working long hours on your feet
  10. Must be able to live in a remote camp environment for up to 4 weeks with a 2 week break, working up to 12-hour days

Responsibilities Include:

  1. Communicate with Camp Manager regarding camp numbers, quantities & ordering
  2. Maintain professional appearance & conduct at all times
  3. Implement weekly menu to reflect contract requirements, healthy choices, and guest preferences
  4. Demonstrate mastery of all aspects of cooking (i.e., proteins, sauces, starches, vegetables, etc.) for all meal types
  5. Accommodate various diets including vegetarian, vegan, cultural, food allergies, and other specific requests
  6. Responsible for ensuring food quality, food safety (including reporting all food allergies), and food standards are met
  7. Supervise, manage, train, mentor, and direct other kitchen staff (as required)
  8. Implement Summit’s Safety Management System
  9. Order food and supplies based on camp occupancy, menu plan, existing inventory and within budget
  10. Organize and assist with unloading and proper storage of grocery orders

Starting Wage: $352.50/day based on 12 hours per day
