Job summary

Fairmont Chateau Lake Louise is seeking an experienced Pastry Chef/Line Cook to join the culinary team in Banff National Park. You will develop pastries and desserts, ensuring quality and timely service for guests of a luxury hotel.

The role requires 3-4 years in baking/pastry, experience in high-volume production, and familiarity with Baker’s Percentages. Substantial staff benefits and on-site housing options are available for full-time status employees.

Qualifications

• Minimum 3-4 years baking/pastry experience in high volume production and ala carte plated desserts.
• Experience in a luxury hotel with comparable service and standards an asset.
• Red Seal Certificate (Journeyman’s papers) or Recognized International Equivalent considered an asset.
• Demonstrates initiative, and the ability to work with minimal supervision.

Responsibilities

• Review the daily production sheets with the Pastry Chef/Chef de Partie and prepare the necessary food items in accordance with standards in a timely and efficient fashion to ensure that there is no interruption to guest service.
• Adhere to standardized recipes and specifications in order to maintain consistency and ensure all standards are met.
• Understand and work by Baker’s Percentages
• Knowledge of mixing techniques for sponges, breads, mousses, etc.
• Ensure that station opening and closing procedures are carried out to standard
• Assumes responsibility for the basic operations of his/her station for short periods when required in the absence of the Chef De Partie or Demi - CDP

Job Description

Pay Rate: $22.70/hr
