Job summary

Fairmont Chateau Lake Louise is seeking an experienced pastry professional to join the culinary team in Banff National Park. You will develop pastries and desserts, following Fairmont standards and collaborating with top chefs to deliver high-quality presentations.

The role requires 3-4 years in baking/pastry, experience in a luxury hotel, and the ability to work holidays, weekends, overnights, and non-day shifts. A Red Seal or equivalent is an asset.

Qualifications

  • Minimum 3-4 years baking/pastry experience in high volume production and ala carte plated desserts.
  • Experience in a luxury hotel with comparable service and standards an asset.
  • Red Seal Certificate (Journeyman’s papers) or Recognized International Equivalent considered an asset.
  • Demonstrates initiative, and the ability to work with minimal supervision.

Responsibilities

  • Review daily production sheets with Pastry Chef and prepare items per standards to ensure uninterrupted guest service.
  • Adhere to standardized recipes and specifications to maintain consistency and standards.
  • Understand and apply Baker’s Percentages.
  • Knowledge of mixing techniques for sponges, breads, mousses, etc.
  • Ensure station opening/closing procedures are carried out to standard.
  • Cover basic station operations in the absence of senior staff.

Job Description

Come join the culinary team at The Fairmont Chateau Lake Louise. Develop your culinary skills with some of Fairmont’s most talented chefs, while enjoying the lifestyle of the Canadian Rockies.

Pay Rate: $22.70/hr

Job Duties Include:

  • Review the daily production sheets with the Pastry Chef/Chef de Partie and prepare the necessary food items in accordance with standards in a timely and efficient fashion to ensure that there is no interruption to guest service
  • Adhere to standardized recipes and specifications in order to maintain consistency and ensure all standards are met
  • Understand and work by Baker’s Percentages
  • Knowledge of mixing techniques for sponges, breads, mousses, etc.
  • Ensure that station opening and closing procedures are carried out to standard
  • Assumes responsibility for the basic operations of his/her station for short periods when required in the absence of the Chef De Partie or Demi - CDP
