Job summary

Dexterra seeks a Baker/Breakfast Cook at our Edmonton camp facility to prepare breakfast and baked goods to high standards. The regular shift is 20 days on and 10 days off, with 11-hour workdays and site transportation provided from Edmonton.

The role includes recipe development, maintaining fresh pastry stock, and supervising night-shift staff while ensuring food safety and regulatory compliance. A Red Seal or equivalent culinary training is required, with FoodSafe Level I as a minimum.

Qualifications

• Interprovincial Red Seal Certification or equivalent culinary training.
• Minimum FoodSafe Level I; HACCP certification is a plus.
• Minimum 3 years cooking and baking in large-scale or institutional settings.
• Experience baking for large guest numbers; prior supervisory experience.
• Must pass WHMIS test with 80% or higher.

Responsibilities

• Preparing and baking goods from scratch.
• Restocking pastry shelves and maintaining fresh supply.
• Creating and following menus to ensure quality of baked goods and desserts.
• Wrapping and dating baked goods per production schedule.
• Ensuring consistent quality in overall food preparation.
• Ensuring proper equipment operation, safety and sanitation in kitchen.
• Complying with Food Safety Act regulations.
• Supervising night shift employees; mentoring and training.

WHAT’S THE JOB?

Based in a world class Dexterra camp facility, the regular shift for this position is 20 days on and 10 days off, with 11-hour workdays. Transportation is provided to site from a pickup point in Edmonton.

Baker/Breakfast Cook is responsible for delighting our clients by preparing and cooking breakfast and baked goods to the highest standards of Dexterra.

This position is safety sensitive and requires drug, alcohol and fit to work testing as a condition of employment.

Your work will include:

• Preparing and baking goods from scratch
• Restocking pastry shelves and maintaining a sufficient and fresh supply of baked goods
• Creating and following menus to ensure quality of baked goods and desserts
• Wrapping and dating all baked goods in accordance with production schedule
• Ensuring consistent quality standard in over-all food preparation as per clients’ requirements including consideration to special dietary constraints
• Ensuring proper equipment operation, safety and sanitation in the kitchen
• Complying with food hygiene regulations in accordance with Food Safety Act
• Supervising night shift employees; providing mentorship and training

Qualifications

WHO ARE WE LOOKING FOR?

• Interprovincial Red Seal Certification or some culinary education leading to Red Seal
• Required: FoodSafe Level I is minimum. SafeCheck advanced food safety certification or HACCP certification is an asset.
• Minimum 3 years’ cooking and baking experience in a similar or hotel/institutional environment
• Proven experience preparing baked goods for large number of guests
• Prior supervisory experience
• Successful candidates MUST obtain a mark of 80% or higher on the mandatory WHMIS test (Workplace Hazardous Materials Information System).
