PERSOL is seeking a Production Manager with strong bakery operations experience to oversee daily production, ensure quality and compliance, and lead a skilled team across bread, pastry, and cake lines.
You will develop schedules, optimize staffing, and drive continuous improvement while coordinating with QA and safety protocols to meet targets and audits.
Oversee and coordinate daily production operations to achieve production targets, delivery timelines, and quality requirements.
Develop and manage production schedules while optimizing workforce deployment to accommodate business needs and seasonal fluctuations.
Establish, enforce, and enhance Standard Operating Procedures (SOPs) covering food safety, hygiene, quality control, and operational effectiveness.
Ensure products consistently meet quality and compliance standards, and drive corrective actions to address and prevent recurring issues.
Supervise, mentor, and assess production personnel, providing guidance, training, and performance development support.
Monitor and control production costs through waste reduction initiatives and productivity improvements while maintaining product standards.
Anticipate operational challenges, identify process bottlenecks, and implement corrective and preventive solutions.
Collaborate on new product development, including product testing, launches, and seasonal offerings.
Prepare and present production reports, highlighting operational performance, key risks, and continuous improvement initiatives.
Support internal and external audits, inspections, and certification processes while ensuring ongoing compliance and audit readiness.
Diploma or Degree in Culinary Arts, Pastry Arts or a related field.
At least 5 years of experience in bakery production, pastry manufacturing, or food production environments.
Proven expertise in large-scale production of bread, pastries, cakes, and other baked goods.
Familiarity with food safety, quality assurance, and workplace safety standards, including HACCP and applicable regulatory requirements.
Willingness and ability to travel as required.
