COREcruitment Ltd in Brussels is seeking an exceptional Sushi Chef / Chef de Partie to join a high-end Japanese restaurant in Brussels city centre.

You will prepare and present sushi and Japanese dishes, maintain the highest standards of food safety, and collaborate with the Head Chef to uphold menu quality.

Fluent in English; French and/or Dutch are a strong advantage. Start date ASAP; full-time position based in Brussels.

Qualifications

• Proven experience as Sushi Chef or Chef de Partie in high-end Japanese or fine-dining restaurant.
• Strong technical skills in sushi preparation, knife work, and fish selection.
• Excellent knowledge of food safety, HACCP standards.
• Fluent in English; French and/or Dutch are a strong advantage.

Responsabilités

• Prepare and present sushi, sashimi, nigiri, maki, and other Japanese specialties.
• Maintain highest standards of quality, consistency, and presentation.
• Work with Head Chef to maintain menu standards and daily service.
• Manage sushi station setup, mise en place, and service flow during peak hours.
• Source and handle premium fish and ingredients with care.
• Maintain HACCP compliance and hygiene standards.
• Monitor stock, minimise waste, and support cost-control initiatives.
• Train and mentor junior sushi chefs and kitchen staff.
• Contribute to menu development and seasonal offerings.
• Uphold restaurant reputation through professionalism and guest-focused service.
