COREcruitment seeks a skilled Sushi Chef / Chef de Partie for a prestigious Japanese restaurant in Brussels. You will prepare and present sushi and related dishes to the highest standards, ensuring food safety and flawless service.

The role requires experience in fine-dining environments, strong knife skills, and a passion for authentic Japanese cuisine. English is required; French/Dutch is a strong advantage. Start date ASAP.

Qualifications

• Proven Sushi Chef experience in a high-end Japanese or fine-dining restaurant.
• Strong knowledge of sushi preparation, knife work, fish selection, and presentation.
• Excellent knowledge of food safety, HACCP standards.

Responsabilités

• Prepare and present sushi, sashimi, nigiri, maki to the highest standards.
• Maintain exceptional quality, consistency, and plating across dishes.
• Collaborate with Head Chef and kitchen team to uphold menu standards.
• Manage sushi station setup, mise en place, and service flow during peak hours.
• Source, select, and handle premium-quality fish and ingredients with care.
• Ensure compliance with HACCP, food safety, and hygiene regulations.
• Monitor stock levels, minimise waste, and support cost-control initiatives.
• Mentor junior sushi chefs and kitchen staff as required.
• Contribute to menu development, seasonal offerings, and events.
• Uphold the restaurant’s reputation through professionalism and guest-focused service.
