Job summary

The Ternary, located in Darling Harbour within the Accor Pacific flagship venue, seeks a Junior Sous Chef with strong Asian kitchen and wok experience to join our high-volume culinary team. You will work closely with the Executive team to maintain exceptional food quality and service standards in a fast-paced, guest-focused environment.

Qualifications

• Proven experience as a Chef de Partie or Demi Chef in a high-volume hotel/restaurant.
• Strong Asian kitchen experience including wok and tandoor cooking in fast-paced service.
• Experience with menu costing, stock management, and food cost controls.
• Open kitchen environment with strong customer engagement and communication skills.
• Trade qualification with Certificate III and IV in Commercial Cookery or equivalent.

Responsibilities

• Assist in supervising and leading kitchen chefs, cooks, and stewarding teams during busy service periods.
• Manage food preparation and production with focus on Asian cuisine in a high-volume service environment.
• Ensure food presentation, cooking techniques, and quality standards exceed guest expectations.
• Support menu development, seasonal promotions, and kitchen cost management.
