Job summary

The Ternary, located in the heart of Darling Harbour in Sydney, is part of Accor's flagship venue. We seek an experienced Junior Sous Chef to lead service across Grill, Wok, and Wine Bar concepts in a fast-paced, high-volume setting.

You will work closely with senior chefs to maintain exceptional food quality, drive operational standards, and engage guests with confident, guest-focused service. Full-time role with generous salary and Accor staff benefits.

Qualifications

• Proven experience as a Chef de Partie or Demi Chef in a high-volume hotel/restaurant.
• Strong Asian kitchen experience essential, including wok and tandoor cooking in fast-paced service.
• Proven experience with menu costing, stock management, and maintaining food cost controls.
• Experience in an open kitchen environment with strong customer engagement and communication skills.

Responsibilities

• Assisting in the supervision and leadership of kitchen chefs, cooks, and stewarding teams during busy service periods.
• Managing food preparation and production with a strong focus on Asian cuisine in a high-volume service environment.
• Ensuring food presentation, cooking techniques, and quality standards meet guest expectations.
• Supporting menu development, seasonal promotions, menu costing, and innovative dining experiences.
