Job summary

Good Pair Days is seeking a hands-on Venue Manager to lead every service on Crown St, set the standard for guest experience, and be accountable for trading numbers across bar and bottle shop. You’ll roster, order, stock, and ensure compliance while reading daily numbers and guiding the team on the floor.

You’ll manage a floor and kitchen team, work evenings and weekends at our Surry Hills store, and bring strong leadership with a focus on guest satisfaction and team development.

Qualifications

• Experience leading a venue such as a small bar, restaurant or bottle shop with a bar attached.
• Accountability for a P&L or a large portion of it.
• Ability to read a roster against revenue and adjust accordingly.
• Comfort running lean, keeping a tight roster while keeping the team busy.
• Knowledge of COGS, wastage and labour percentage.
• Lead from the floor, greet guests, pour and sell with the team.
• Experience hiring and training staff and handling difficult conversations.
• Current NSW RSA and licensing/compliance knowledge.
• Happy to work evenings and weekends.
• Wine knowledge is a bonus, not the sole focus.

Responsibilities

• Lead every service and set the standard for guest experience.
• Manage rosters, ordering, stock, and compliance.
• Roster tightly to trade needs and avoid overstaffing.
• Monitor labour as a percentage of revenue weekly.
• Know margins across bottle shop vs bar, wine vs food.
• Run tight stock control, ordering to par, reduce wastage.
• Protect revenue through take-away bottles, events and workshops.
• Read daily numbers and act within the week.
• Build a team that identifies and greets members and first-time guests.
• Own trading numbers including walk-in conversion, email sign-ups, repeat visits, and sales across bar and bottle shop.
• Line manage the floor and kitchen team.
• Work evenings and weekends when Crown St comes alive.
