Job summary

Royal Sydney is seeking a dynamic Restaurant & Bar Manager to lead daily operations across Restaurant, Casual Dining and Bar, delivering exceptional service and high-quality food and beverage experiences.

You will drive team leadership, maintain service standards and enhance member and guest satisfaction while supporting the Food & Beverage department’s commercial objectives. The role requires a flexible roster including evenings and weekends.

Qualifications

• Proven work experience as a Restaurant Manager in a 5 Star Hotel or Fine Dining setting.
• Proven experience in leading a team of up to 20 staff.
• Culinary school Diploma or Degree in food service management or related field, or equivalent training course.
• Strong interpersonal communication skills and ability to build relationships with members and staff.
• Administration skills and working knowledge of MS Office, POS and Respak bookings software.
• Expertise in wine pairings.
• Current NSW RSA and working rights in Australia.

Responsibilities

• Ensure exceptional member and guest experiences are delivered to the highest standards in line with Club values.
• Oversee daily operations across restaurant and bar, manage POS updates and inventory.
• Identify and implement service improvements to enhance guest satisfaction.
• Lead, mentor and train the team, ensuring effective staffing, scheduling and strong performance.
• Collaborate on event promotions and menu offerings to drive revenue.
• Foster open communication, collaboration and alignment with Club values.
• Respond to member complaints efficiently and accurately.
• Assist members and guests with wine recommendations, wine service and correct decanting.
• Develop policies, standards and procedures for Restaurant, Casual Dining and Bar areas.
