Job summary

The Royal Sydney Golf Club in Rose Bay, NSW, is seeking a dynamic Restaurant & Bar Manager to lead the daily operations of the Restaurant, Casual Dining and Bar, delivering exceptional service and high-quality food and beverage experiences. The role requires flexibility to work evenings and weekends as part of a full-time roster.

You will drive team leadership, uphold top service standards, and enhance member and guest satisfaction while supporting commercial goals of the Food & Beverage

Qualifications

• Proven work experience as a Restaurant Manager in a 5 Star Hotel or Fine Dining setting.
• Experience leading a team of up to 20 staff.
• Culinary school diploma or degree in food service management or equivalent.
• Strong interpersonal and communication skills with members and staff.
• Solid admin skills and knowledge of MS Office, POS, Respak systems.
• Expertise in food and beverage pairings.
• Understanding of pricing, budgets and cost controls.
• Knowledge of wine and ability to manage wine service and temperatures.
• Current NSW RSA and Australian working rights.

The Role:

We are looking for a dynamic Restaurant & Bar Manager to lead and oversee the daily operations of the Restaurant, Casual Dining and Bar, ensuring exceptional service delivery, high-quality food & beverage experiences and seamless operational performance.

You will be responsible for driving team leadership, maintaining high service standards, and enhancing member and guest satisfaction while supporting the overall commercial and operational objectives of the Food & Beverage department.

This is a full-time role requiring availability to work a flexible roster including evenings during the week and on weekends.

Key Responsibilities:

• Ensure exceptional member and guest experiences are delivered and are of the highest quality in line with Club standards.
• Oversee daily operations across restaurant and bar, manage POS updates and maintain inventory.
• Identify and implement service improvements.
• Lead, mentor and train the team, ensuring effective staffing, scheduling, and strong performance levels, creating growth L&D opportunities.
• Collaborate on event promotions and menu offerings to drive revenue.
• Foster a culture of open communication, support and collaboration, ensuring alignment is reflective with Club Values.
• Responding efficiently and accurately to member complaints.
• Assist members and guests during the dinner service with wine recommendations and selection for perfect pairing with their dinner, decanting of the wine and wine service.
• Ensure the development of policies, standards and procedures for all aspects of the Restaurant, Casual Dining and Bar areas.

What We Need From You:

• Proven work experience as a Restaurant Manager working in a 5 Star Hotel or Fine Dining Restaurant.
• Strong experience in managing and leading a team of up to 20 staff.
• Culinary school Diploma or Degree in food service management or related field, or equivalent training course.
• Strong interpersonal communication skills, fostering strong relationships with members, staff and key stakeholders.
• Strong administration skills and working knowledge of computer software programs (MS Office, POS, Respak bookings software).
• Expertise in food and beverage pairings.
• Solid understanding of pricing, budgets and cost controls.
• A deep knowledge of wine and the ability to determine wine faults and maintain proper temperatures in order to showcase products at their maximum potential.
• Current NSW RSA and working rights in Australia.
