Job summary

Crown Resorts Limited in Melbourne is seeking a Procurement Manager to lead F&B and OS&E procurement for new hospitality projects from concept to opening. You will partner with Development, Design, Property and Food & Beverage teams to ensure on-brand, on-budget delivery.

The ideal candidate has 5 years in procurement for hotel or hospitality fit-outs, strong budgeting and supplier negotiation skills, and a solid grasp of procurement systems and data. A business or related degree is desirable.

Qualifications

• 5 years' experience in procurement or purchasing, ideally supporting hotel, restaurant or hospitality fit-out and pre-opening projects.
• Experience sourcing F&B, FF&E and OS&E for construction, refurbishment or new-build projects.
• Strong financial acumen, with experience managing project budgets, purchase orders and supplier reporting.
• Proven negotiation and supplier relationship skills, and the ability to influence stakeholders at all levels.
• Highly organised, with the ability to manage multiple concurrent projects to tight deadlines and strong attention to detail.

Responsibilities

• Run sourcing events, tenders and quoting processes for F&B and OS&E; evaluate suppliers.

• Track spend against budgets; maintain POs, trackers and supplier records; manage lead times and risks.

The Opportunity We're looking for a Procurement Manager to lead procurement for our new hospitality projects, including new restaurant openings and hotel refurbishments, from concept through to opening. Reporting to the Head of Procurement – Hospitality, Corporate Services and Marketing, you'll partner with our Development, Design, Property and Food & Beverage teams to source and buy F&B and OS&E (operating supplies and equipment). You'll make sure every project opens on budget, on schedule and in line with our brand standards. This is a newly created role where someone can come in and drive the function.

What You'll Do

Build and manage procurement schedules for each pre-opening project, lining up F&B and OS&E deliveries with construction and fit-out milestones Work with Development, Design and Project teams to turn design specifications and brand standards into accurate procurement scopes and budgets Run sourcing events, tenders and quoting processes for F&B and OS&E, evaluating suppliers on cost, quality, delivery and brand compliance Negotiate commercial terms with suppliers and contractors, and find opportunities to consolidate suppliers across concurrent projects Track spend against project budgets with Finance and Cost Control, report on variances, and keep purchase orders, trackers and supplier records up to date Manage supplier lead times and deliveries, elevate risks to project timelines, and visit project sites, trade shows and showrooms to source new products

What You'll Bring

5 years' experience in procurement or purchasing, ideally supporting hotel, restaurant or hospitality fit-out and pre-opening projects Demonstrated experience sourcing F&B, FF&E and/or OS&E for construction, refurbishment or new-build projects Strong financial acumen, with experience managing project budgets, purchase orders and supplier reporting Proven negotiation and supplier relationship skills, and the ability to influence stakeholders at all levels Highly organised, with the ability to manage multiple concurrent projects to tight deadlines and strong attention to detail Solid IT and data analysis skills using procurement or project management systems. A degree in Business, Commerce, Economics, Finance or Project Management is desirable
