Job summary

Peppers Cradle Mountain Lodge in Tasmania is seeking a Sous Chef to join our Kitchen team. You will assist in daily food preparation and execution, and contribute to creating new menus and guest experiences for our ceremonies, weddings, and functions.

Reporting to the Head Chef, you will lead a team, help with a la carte and function dining, and work across a 7-day roster including days, nights and weekends. Knowledge of HACCP and high-volume service is essential.

Qualifications

• Certificate III or IV in Commercial Cookery is required.
• Experience as Sous Chef leading a team in a high-volume kitchen.
• Experience in an a la carte hotel restaurant or functions kitchen is highly regarded.

Responsibilities

• Assist in daily food preparation and execution.
• Contribute to creating new menus and guest experiences.
• Lead the kitchen team when required and support Head Chef.
• Support a la carte and function dining services, including weddings.
